Wazwan & Kashmiri cuisine

The Wazwan is a centuries-old, multi-course banquet prepared by master chefs known as Wazas. Traditionally served on a large copper plate called a trami shared between four guests, the meal can run to 36 courses — most of them slow-cooked meat preparations using Kashmiri red chilli, fennel, dry ginger and yogurt. Hosting a Wazwan is a mark of hospitality and a centerpiece of Kashmiri weddings.
